Agathi Seeds Red botanically classified as Sesbania grandiflora, is a multy-purpose, rapidly growing, and tropical tree, belonging to the legume family, Fabaceae. Natively grown in Southeast Asia and some regions of India, this plant is part of of food, medicine, and ornamentation. It has enormous value in local delicacies and traditional medicinal purposes, mostly used in South India.
Agathi is 10 meters tall (33 feet), with a very thin trunk and spreading branches. The leaves are pinnate and pale green in color. Large, crescent-shaped flowers-white, pink, or red-form the girth. Pods up to several feet long containing seeds are edible too. Since it is an ornamental plant, it is occasionally part of many medicine and dishes.
Agathi plant is edible. Leafy greens make up a crucial part of its traditional South Indian recipes, namely Agathi Keerai Poriyal-dish like green stir-fries-and in soup. The edible flowers are a great addition when used fresh and added to salad, stir-fry, curry, etc.; they give that mild bitter feel. Young tender green pods cook and eat green beans. There is sometimes partial boiling before adding to the preparations to reduce some bitterness in these leaves and flowers.
